what is the recommended for production deployment?

is it to use CMS1000M6 or Customized specs for CMS with Co-residency?

and if there is a Cisco document confirm which deployment is preferred.

There is no recommendation. Why should there be one? Both scenarios are supported by Cisco.
CMS1000 has the advantage, that it can handle more calls compared to a CMS-VM on a specs-based server.

as per cisco document u can customize the vCPU and vRAM to handle whatever number of calls u want

That's true. But I didn't say, that you cannot put more vCPUs and vRAM to the specs-based VM.
I just said, that there is no recommendation.
