I am trying to clean up my AMP console of old computer and was wondering if I deleted a computer that hadn't checked in in months if it came back online would it readd itself to the console?

I believe so. If AMP is installed on the endpoint, it will check into the console and should reappear on the list after that happens. Best way to clean up the list is to uninstall the application from the endpoint.

Yes. I just tested it again with a test box.

When the machine checks in, it reappears in the console.
