I'm really confused here. I can't enable multiple contexts on the ASA. What am I doing wrong here?

You are running ASAv which doesn't support multi context mode.

as @Milos_Jovanovic mentioned the ASAv does not support the multi-context features. with the virtual appliances you only do a active standby setup. in order for you to have a multi-context you need a physical firewall.
