Which Cisco AP can handle the most devices? I have a Historical building that I need to get online, but need to minimize the impact to the building physically and aesthetically. Thank you!

That's not a good approach, loading an AP as much as possible.

Theoretically a given radio (2.4GHz/5GHz) can support 200 clients, yet you should not plan that many client for given AP. see below link (400 given as max count since those are dual band APs)
