I'm having this same issue which is causing my APs not to join to the controller after moving them over. Is this still a beta copy? 7.6.120.1, i'm running 7.6.120.0 at the moment.

Yes its a bug but i haven't tried this on Hyper-v ,you can test the same after up gradation of firmware and see if this happen on Hyper-v live migration also .

vWLC serial number changes when using DRS or Vmotion

Description

Symptom:
vWLC serial number changes when using DRS or Vmotion

Conditions:
when using DRS or vMotion to maintain high availability on vmare the UUID changes and invalidates the AP licenses.

Workaround:
setup DRS rules or do not use vmotion to keep vWLC on single host.
