Is there a document that explains a Webex call setup and takedown process?

Looking for the path it takes to setup/takedown call includng ports and protocols.

Also from the 3 ways to join ( web, outlook and webex client)

Like what role does th ebrowser play, etc.?

I believe it would be best if you start here - https://help.webex.com/en-us/WBX264/How-Do-I-Allow-Webex-Meetings-Traffic-on-My-Network

This will give you an idea of the ports used for any Webex service.
Generally speaking at a high level, whether you join from Outlook, Web, or the desktop agent - it all is manipulated over the same connection / ports.
