If you have more than 1 Spine and your mentioned leaf has been connected to them(at least connected to two Spines), its simple as unplug and plug, Because the COOP protocol maintains endpoints database on all spines and your traffic will be steer correctly without interruption.
If your leaf connected to your single Spine with more than one port, so you can easily unplug and plug one of them at a time.
The configuration and state of old and new Spine ports, depends on your Access Policies and Fabric Policies settings. Usually not configured, but be careful and check precisely.
