You can only configure allow ACLs, no denys (except the deny all at the end).

That has changed since then. According to this doc:

"Note Beginning with Cisco IOS Release 12.2(58)SE, both permit and deny ACL entries are supported in WCCP redirect lists."
And this is suppoted apparently only on some platforms of Catalyst (3750-X, 3750-E, 3560-X, 3560-E) according to this: http://www.cisco.com/c/en/us/products/collateral/switches/catalyst-3750-series-switches/product_bulletin_c25-658743.html
