Thank you. We have a project where multiple users will need to login to one account and each user will have an iPad. Do we know how many users can log into one Jabber Account using multiple iPads?

you will be able to use the phone services at only one profile, if the same profile has been logged in to multiple ipads.but you can have sahred line with mutilple user accpount.
For example, if you have user1 logged in to ipad1, and when you log in the user1 on ipad 2, you prompted which device should use phone services.

That would be defined under Maximum number of logon sessions per user, don't have a server to look at the maximum, believe the default is 10. That would be for IM AND PRESENCE only, meaning chat.
When it comes to devices in CUCM, each user can have one of each kind, CSF, BOT, TCT and TAB, and only ONE of each kind can be registered at any given time. If you already have a Jabber for iPad logged in and the same user logs into other iPad, you'll get a warning that the phone services are already being used in other client and whether you want to move the phone services to the new client, or remain on the other client. Same for all other Jabber clients.
So, you can have multiple clients logged in with the same user, but only for IM&P.
If you need phone services, that won't work.
