We are using the Full UC.
I have a fix, but I don't like it. I was able to get the icon by taking the jabber-config-defaults.xml file from another computer (Let's call it Computer1 because I'm going to reference it later) that had the chat icons. I don't like this solution because therewere several differences between the other user's .xml and the one I'm using in my deployment. I'd rather just change the appropriate setting(s) than find out I've broken something else.
Similarly I don't have the option to create a conference call for a contact group, but it DOES work on Computer1. Since I'm using its .XML file, I'm not sure what else I need to add/change in my Jabber deployment.
