All of the data in my Spark Rooms has disappeared replaced by a single conversation that occurred in one of the Rooms.
How did this happen and how do I get back my History?

As @Jaime Valencia pointed out, as you are a Cisco employee, you will likely have better luck in finding a solution to your issue by contacting your internal support group instead of positing in this public forum.
But the issue sounds very much like your Cisco Teams app cannot currently connect to the Teams server resources to download and decrypt any content, so checking your connectivity would be a good place to start.
