The data sheet for the SX20 states two video inputs - One HDMI and One DVI-I.  Is that two discreet inputs or one input with two connection options?
Will the SX20 pass through sources connected to the content input without being in a call?

There is no signal degradation other than a small amount of latency. However, the supported resolutions must be observed as listed on the Datasheet. The SX20 supports resolutions up to 1920 x 1080. 
 
Keep in mind you have to start Presentation in order to display the DVI input locally when not in a call. This is easy from the touch panel.

Correct, this is two separate inputs, DVI is normally used for content and HDMI in is for the main camera. It is also possible to swap them around by using the xAPI, but this is not the recommended usage.
