Here is my recommendation for IPPhone selection:

a) 3905 for areas/users with basic needs

IPPhone with basic features, more fit in analog replacement cases or areas/users with very basic needs (no Jabber control, no extension mobility,etc.)

b) 7811 or 7821 or 7841 for majority of users/knowledge workers 

7811 // very good in terms of IPPBX features, 1-line, 10/100 switch, no headset port, narrowband audio

7821 // very good in terms of IPPBX features, 2-lines, 10/100 switch, headset port, wideband audio

7841 // very good in terms of IPPBX features, 4-lines, gigabit switch, headset port, wideband audio

c) 8851 for managers and assistants

8851 // very good in terms of IPPBX features, managerial, 10 lines, big color display, gigabit, expansion modules, wideband audio, bluetooth. 

Other options also exist and are valid for managerial phones like 7841, 8811, 8841, 8861, 8845/8865 video phones. I like 8851 since is the first it has expansion module (among other features). For video, I would go for a video endpoint (DX80 or Room kit Mini) for the managers area and not necessarily provide video on deskphone. Same for operators/assistants(various other options are valid like 7841, 7861, 8811, etc.) 

d) 7832 or 8832 for conf rooms

7832 is for smaller rooms (16sq.meter room sizes) or  8832 for large rooms.

8832 has various options to cover various sizes (no mics, wired or wireless microphones).

Extra note - use free Jabber with IPPhones to provide extra value to users

Since CUCM/BE6K solution offers Jabber IM/Presence and deskphone control for free, remember that all your users could use Jabber to control their IPPhones (this is ''deskphone control'').

Note1; All 78xx/88xx phones for users support deskphone control via Jabber client (3905 does not).

Note2: Jabber client requires license ONLY if voice/video terminates on the laptop - softphone mode).

So a user could use Jabber client to search contacts (or find contacts in buddy list) and click to call (user clicks on Jabber and IPPhone makes the call). Or start chating with a colleague and then select click to call to escalate to a voice call. So, in modern IPPBX solutions that you have software clients like Jabber, you don't necessarily need many hardware buttons on the phone since a lot of things can be done from your laptop (search directories, select contacts, click to call,etc.) In other words, even a user with 7811 (1-line phone) and Jabber is very poweful. 

 

Note3: note also that Expressway supports today IM Federation with O365 S4B users for free so your Jabber users could talk with other orgs that use S4B (provided other orgs allow IM Federation).
