We are testing this is our lab. When we sync users with OpenLdap we ger userID as xxx@xxx.com but when we sync with MS Active directory we get user ID as xxx.
check the LDAP Attribute for User ID. If set to Mail il will sync users with the e-mail (xxx@xxx.com) if set withe sAMAccountName it will bring the account name (xxx).
So check how you have this on your lab vs production
