Using Finesse for multiple companies- Unique Call Variable per Team - same as Desktop layout

We have a requirement for two departments to have call variables displayed on Finesse, both departments use the same Finesse system and can make use of the same call variable however the "description" which we apply to the call variable in Finesse is not applicable to both departments

e.g Call variable1 is for CLI

Department A requires the Finesse to describe as "Company " 

Department B looks for the same call variable but requires it to be described as "Internal Number"

These are just example descriptions

We could use different call variables so Department A could use Call variable 1 while department B could use Call variable 2  so the descriptions can be unique however both call Variables will show up on the Agents Desktop - is there a way we can limit what call variable can be displayed for each Finesse, Agent Team - similar to Desktop layout?

Can Finesse be upgraded to 11

Can Finesse be upgraded to 11 while the rest of UCCE stays on version 10.5?
