I would like to know if there is any type of software available to provide analytics using the Meraki Cameras to provide, for example, a count of people, unique visitors, and returning visitors.

There is no API for the MV series today. The data you wish to gather including visitor count and return visitors is possible using the MR wireless access points and is included in our dashboard and available in the Scanning API.
