n9k - vxlan - why store and forward switching? is it supposed to be cut through since store and forward is slow compare to cut through.

Where did you read that N9K needs to be changed to store-and-forward?
As far as I know, only Nexus 5600 requires to be in store-and-forward mode, due to hardware limitation.
