I'm from the APJ mobility architecture team and have extensive experience with Arduino and the likes.
a. Can somebody please assist with what are the basic things needed (maybe its somewhere on this site already!) to get a demo setup going.
b. Is the iOX image customizable to any kind of sensor or expects to use pre-packaged devices/sensors?
c, Any pointers to noobs highly appreciated.
a. the following link is a good starting point for iox with Arduino Data-in-Motion , go through the videos and ask any questions you might have, will be happy to assist. all you really need a iox compatible device (CGR819 for instance) and Arduino/RPI
b. DMO is device agnostic, you could talk to any sensor package as long as the sensor has sometype of web service (API call) that can respond to the DMO with data (json/xml)

When you say any supported IOX device, I am having an epicly hard time finding a list of supported devices . The 819 is a bit pricey for me, and the "find a local re-seller" page wasn't much help. Any ideas where I can find a list of supported devices?
Sent my details to sales but not sure when they'll get around to it.

Finally got a hold of a C819 and set it up, but it was bought for me for my thesis, what do I tell my firm for them to find details about obtaining the latest DMo ova and the licence? Docs say call sales/support and they don't seem to know. I am waiting on a call back from tech support.

on our DevNet Site, you will find the OVA for DMo under our Download Section
the way i see it is you have 2 options:
1. since you have C819 , you could download the latest IOX image from CCO which includes DMo availble here: Cisco Systems
2. run DMo OVA on virtual box on your local machine and do your POC that way.
as far as licensing your session, you normally would need to purchase a DMo license, however, since you are doing this for a POC for your thesis , i will unicast you a demo license.
