So, if it's outlook, it will cache anyone you sent to before and if you type carlos, it would suggest the name. Select the X at the right of the suggestion to delete it from cache.
As for the ESAs do you have an alias set up when testing the new domain that aliased anything to the old domain? Best way is to dump the config since it should be XML and search it for the old domain, that can help you key in on any config you may have.

Thank you Dustin for the fast response, I have two more questions for you:
As we don't have access to the CLI
-Can i access the alias table from the GUI?
-On 'System Administration' > 'Configuration File' > machine: It says on backup "this feature is currently disabled".

We may be on different versions, but we are on version 14 and yes, Alias is only via CLI. the only other way for GUI would be to dump config, edit the section for alias, and re-upload. not sure why you show not available unless you are a limited user.
On mine, under system administration/config file, I can select download as either encrypted, or masked passphrases.
one other thing, do you have access to the email logs at all? may not without CLI, but you could look at the logs to see if it is hitting an alias. you would at least see what it is received as to know if it's the email security doing the change or something else.
