I have a Fax server with analog trunks. I need to configure a 2811 to be able to pass 5 digits to it.
Can I do it with a vwic3 4 port fxs/DID?
Can I do it with MGCP?
and where can I find configs or examples of it.

Yes, the card should work fine.
Depending on what faxing protocol you are planning on using MGCP may not be the wiesest choice, h323 and SIP both support T.38 version 3 which supposts super G3 speeds with 15.1+ IOS. For T.38 version 0 or passthrough or cisco fax relay either protocol is fine.
there is plenty of config samples on CCO and this forum, you use the search tools.
