Hi all.
I am configuring some ATA 187 using CUCM 8.0 .
The FAX devices that i am connecting to the ATA are voice calls capable.
The customer want to restrict the voice calls through this devices .
I have configured the ata with a Calling search space permitting the pstn connection but i haven't found any option restriction the voice calls through it.

I'm not sure you are going to find a way to do this. In order for a fax call to be negotiated (passthrough, t38, etc), a voice call must first be established. You won't be able to differentiate the two in order to block voice calls.

use an ACL to deny RTP from this ATA ip add
do it on your core switch or on the ATA switch if support this
or you could try easier one,, don't apply voice vlan to the ATA sw port

Using an ACL to block RTP will also prevent fax calls as well. The DSPs on the ATA use RTP to detect fax tone, which is what initiates the switchover. If you block RTP, then fax calls will also fail.
