the gateway've added a card for E1, with a number of channels, my question is how I can enable for example only 8 of the 16 available channels?

On the controller you would specify a limited quantity of channels when defining the pri-group. Example with only timeslots 1-5 enabled:
controller E1 0/3/0
pri-group timeslots 1-5,16
