Hello, I wanted to know that in order to connect phones to my ITSP using sip, do I need to use CUBE? or is there another way in CUCM I can do this without CUBE?

You can also terminate the ITSP SIP trunk directly in CUCM if feasible. CUBE is not mandatory but recommended as it can provide lot of options and help in doing any kind of modifications.

The use of CUBE offers high level of Security and it is highly recommended to be implemented when SIP providers exist on your UC enviroment. Check page 2 from the following doc:

In addition to great responses already provided, keep in mind that Cisco CUBE is not the only Border Element you can use (agree it's very highly recommended to have border element), there are other well regarded border elements that work well with CUCM, i.e. Oracle ACME, Sonus from Ribbon to name the most common ones.  I am biased towards CUBE and would pick CUBE any day mostly due to having solution from one vendor without the risk of finger pointing, but others may prefer the competition as they for example have better management portal, diagnostics/tracing, etc.
