If we use CUBE for the termination of SIP trunk and on the back end create SIP trunk with CCM then will the voice path be driectly from gateway to end point (IP Phone) once the call is routed by CCM to a particular extension like we have with H.323 gateways.

Yes, in most CUBE deployment (media flow through) RTP stream is always sent directly between the IP phone and the gateway. CUCM is never involved in the media path..
