Are there recommendations for unused TFTP files?
Is there a reason to keep firmware for phones that are EoS/EoL that we don't have in our environment already around or safe to remove those types of files?
Any reason we would want to hold onto any old versions of anything specifically as well?

It is safe to remove them, even if you ever decide to add one of those phones it will register with already installed firmware or you can always install new firmware on TFTP servers.

Hi
You can clean up the TFTP by deleting the old unused firmwares. You can do that from GUI or CLI.
But be cautious while selecting the files as it could pop up all the files related to that model of phone.
GUI >> OS Administration under TFTP file management.
Fine the filename with contains the phone model (7975) >> Select >> Delete
CLI
file list tftp filename : Check the right file name
file delete tftp filename: For deleting
Note - Delete from all nodes in the cluster
