I would know if I can install CUCM 8 on this platform:
UCS C210 Rack Svr, 2x E5620, 6x4GB ddr 1333, 2PS, LSI1064
But the installation won't be on VMWare, but the same like the older version of CUCM

Sadly, that is not supported
Cisco is introducing software application versions from the Cisco® Unified Communications portfolio (Versions 8.0(2) and later) that are supported for production use on specific configurations of VMware vSphere 4 (ESXi 4.0), specific Cisco Unified Computing System™ (UCS) servers, and specific storage configurations.
• Cisco UCS B200 M2 and UCS B200 M1 Blade Servers with third-party Fibre Channel storage area network (SAN)-attached disk arrays are supported.
• Cisco UCS C210 M2 and C210 M1 General-Purpose Rack-Mount Servers with specific configurations of either direct attached storage (DAS) or Fibre Channel SAN are supported.
• Cisco UCS C200 M2 General-Purpose Rack-Mount Server with specific configurations of DAS is supported.
• VMware ESXi 4.0 is required for all of these servers. Available applications include IP telephony, emergency services, messaging, presence, customer care, and management; refer to http://www.cisco.com/go/uc-virtualized for details. Application co-residency is also supported; refer to http://www.cisco.com/go/uc-virtualized for details.
