what is the difference between e.g. "normal" CP-7841-K9 and CP-7841-3PCC-K9.?

CP-7841-K9 run with CuCM and

CP-7841-3PCC-K9 use the multi platform firmware. You can get more details about Multiplatform here:

"3PCC" stands for 3rd Party Call Controller. This is useful if the phone is meant to be "managed" by a non-Cisco call controller/manager software like Asterisk or 3CX.
