Is there a Service or Enterprise parameter that will override the external phone number mask for a DN in CM 10.5? I have the external number mask set as the main number for some extensions but the caller ID showing on the called phones outside of our network is showing the DID.

There is a few places where this can happen. Within CUCM you can have Calling party transformations at the Route List level or even at a Translation pattern level will override your external phone number mask.
If you are using a CUBE, translation rules would override this as well.
I recommend that you try using the dialed number analyzer within CUCM to truly understand what your call is doing, or you could go straight to traces if you feel comfortable.

Route pattern mask setting will override the DN level mask setting applied.
refer the SRND section 'Route Pattern Configuration' for more on the same.
