Doug,
this can be acheived by the following:
Log into your CUCM admin page browse to device > Device Settings > Phone services in here you will see all your directories.
You can enable and disable these from here, please note this will disable directories accross sites.
Alternatively i beleive you could put bogus information in the directory feild in the phone configuration page for phones which do not want to have directories shown.
