I thought OUIs were the first octet of the MAC address, but I have several same model phones and they all seem to have different OUIs. Where or how can I get the OUIs of my Cisco phone models.

Cisco holds many OUIs. Something like 2500. So it is not surprising that phones of the same model - even those purchased at the same time - might have different OUIs. Here is a link to the IEEE OUI listing: https://standards-oui.ieee.org/ You can search for Cisco and see the OUIs the company currently holds. (And companies that Cisco has purchased might be listed separately, so even more.)
FYI: The OUI is not the first Octet, but the first six hex characters of the MAC (so the first half of the MAC).
