Unfortunately, there is no "migration" path for Business Edition (co-resident installations). In order to move to a standalone CUCM cluster, you must rebuild from scratch. You may be able to leverage BAT to grab dial plan and phone data; however, I don't have a Business Edition box set up right now to test this in my lab. You can definitely do that with 7x in standard installs for CUCM.
The Unity Connection part to move to Unity UM is a bit trickier. There is a migration tool (COBRAS); however, here is the version support matrix:

NOTE: Restores to Connection 7.x or later are supported only for stand alone installations – you cannot import backups into a co-resident (Business Edition) installations.
So, as you can see - you cannot backup Unity Connection and import the data into any version of Unity. So, you'd want to look at getting data from Unity Connection using BAT and that would at least allow you to have a seed file to import user data into Unity but aside from that, you'll have to approach it as a new build.
