We have a cluster that has only sx20 deployed that or used for telemedicine only/ they only communicate with jabber callers
We need to extract the following information of each telepresence endpoint from CUCM server on regular basis.
jabber caller or DN
endpoint that was called (sip uri or DN)
length of call
type of call; traversal ,sip
any help would be appreciated.....tryin to pull this limited info out of the gigantic CDRs is maddening

CAR can get you reports per user or DN or URI, and they have the basic info as to who they called, who called them, length, etc.
But CUCM has no idea whether it was calling a device on a VCS, on another cluster, on the internet, other company, traversal, etc.
All CUCM would know, is that it was sent via a (SIP) route pattern to an external destination, and that's about it. CUCM has no visibility for anything besides that it sent the call outside via a trunk/GW.

Is there an easy way for a rookie to set up a CAR user group?

There are only 3 levels of access in CAR, admin, user and manager, not sure what you mean.
