Those phones will support SIP, HOWEVER, only 78XX will support 3PCC firmware.

There is no such thing as an "open SIP". It is either SIP or not SIP (like Cisco's SCCP).
Enterprise firmware (SIP) can "integrate" with NEC PABX if the call manager supports SIP.
And here is the "gotcha", 69XX and 79XX do not support 3PCC. Which means they "can" be supported by a SIP call manager server BUT they need to be individually configured.
If you do not know what you are doing, then don't. It can/will test your patience.
My recommendation is to find phones that support 3PCC firmware.

The first thing you need to check is your NEC compatibility guide. you need to check with NEC which firmware version is required for these phones to register with NEC PBX.
69XX and 79XX will support both sip and SCCP. if these phones are loaded with SCCP, you need to convert them to SIP.
7811 is a sip phone.
I have registered 7945 on Huawei with SIP, we loaded the fimrware as per their Guide.
