PBX operator supervisor is asking for a report of all calls made from and received by a certain extension, they think an employee is abusing the phone.
Is there a log by default or is it something that I need to configure and then run a report on?

Assuming you have CDR enabled, you can use CAR, if you don't have CDR enabled, your best bet would be to review CUCM logs.

If you're and end user, I'd suggest you to reach your CUCM admin for this task.

Nope, I am a CUCM "admin" now. Picking my way through this and trying not to cause too much damage in the process.
