I recently installed 2 pvdm modules into my cube.
Show diag confirms theres a pvdm slot 1 and 2.
I have a voice-card 0 configured for dspfarm.
How can I tell if the cube is using both pvdm slot 1 and 2?

If I'm not all wrong you'd need this as well as you have two PVDM slots.

On the media resources that you have configured you'd be able to figure out if it would use both PVDMs based on the max number of available maximum session that you have possible to set. Looking at your configuration you do not have that set at all on your two media resources where you'd likely want to use the hardware resources.
You also do not have any SCCP configuration present, so the media resources would not have any way to know where they should register. There are plenty of documentation available around this if you search on internet with your favorite search engine. One example that is pretty good is this document, Basic Hardware-Base IOS Media Resources configuration and registration with Call Manager
One additional advice, if you do not intend to use VAD, and you'll likely won't as VAD=BAD, with this you should remove any codec under your media resources that has a "b" in the name as that means that it supports VAD. Please note that some codecs are auto added at the time of creating the media resource, so the best thing is to remove them prior to adding the max session command and un-shutting it. Otherwise you'd need to shut it, temporary remove the max session to be able to do a no codec .... command and then add the max session command back again and un-shut the media resource.

As Roger mentioned, you probably need to add sccp config for your media resources to be functional.
However, you're also missing the "maximum sessions" command under your transcode and conf dspfarm profiles. I'm pretty sure you need this to tell the router how many DSPs to allocate for each media resource type. It's been a while, but I think the more complex the profile (determined by how many supported codecs configured) the more DSPs each session will consume.
Once you add that, the command -- show dspfarm dsp all -- should show you exactly how DSPs are allocated among xcode and conf. The example below is from a 4331, but this command has been around for years. 0/4 references the PVDM slot on my router (voice-card 0/4)

Your original question was, "How can I tell if the cube is using both pvdm slot 1 and 2?"
Did you confirm both are being used with the "show dspfarm dsp all" command? Would you mind posting the output if you get a chance? Just curious.
