I have a few remote sites which I don't really want to drive to and pick up the phone and perform a test to make sure that calls are routing correctly (i.e. using the correct Voice Gateway for the specific route pattern). Is there a way to make a call on either the Voice Gateway or the CUCM so watch the call and see the path that it takes?

Configure any local phone as if was in the remote site and test.
CM doesn't really know where stuff is; it believes what you type in.

Configure IP Communicator with multiple line with all type of extensions.
Make the calls such that you can call internal extensions to check the internal configs.
Use the DID numbers so send to the PSTN and route it back to the cluster.
The CUCM will not look, where the location of the phone.

Also, you can use the dialed number analyzer tool in CUCM servicability to ensure calls are hitting the appropriate route pattern.
