I follow below practice,

Disk usage threshold should not be increased to 75%

CPU and Memory should be below 70%

There is no exact document imo. You can set the alert in Cisco RTMT to monitor the CUCM CPU.

Recommended practice is to disable logging, load balancing of load among CUCM subscribers in a cluster, periodical restart of servers.
