What happens if you don't set up aaa models for console, telnet and ssh? Does this mean that even if you connect a console line to the router, for example, you won't be able to login or you would be able to login without need for authentication? Thanks.

AAA is required for SSH. Console does not require a password and telnet can set a password on the VTY/TTY lines. See Configuring the Terminal Server for Telnet Access > CCNA Practical Studies: Gaining Access to Routers and Switches
