I installed a wildcard certificate on an ISE 1.1.1 server, but found out they are not supported in that release. I want to delete the certificate, but can't because it is associated with EAP. Is there a way to delete this certificate.

Change EAP/HTTPS to another certificate on the node (self signed, perhaps?) Just open another certificate and check the box. The ISE node will restart the web application once you make a change to the certificate it uses.

Correct wildcard certificate is supported from ISE 1.2
You can create a new self signed certificate with CN as ISE FQDN with both the protocols options checked EAP and HTTPS.
