I need to set up syslog for my Cisco 6509, but I'm at a loss to how I set a path. I can set a host or IP address for my syslog server, but how do I tell it what path/folder to use?

The path/folder portion is done on the server itself. What syslog application are you running and on which OS?

Not decided yet as my server guy has asked how it specifies the path. I was going to just get a VM built on our SAN for the disk space. I did think you just set either a host or an IP address.

On the device you would just specifiy the command: logging
The path is done by the application you choose or the OS.
For example on solaris it is handled by syslog.conf which specifies where messages are logged on the system
On windows it depends on your application.
