It looks like the PIX accepts a standard PCI expansion card, but I was wondering if any one knew for sure that a third-party 10/100 Ethernet adapter would work.

Not just any old PCI Ethernet card will work in a PIX.
I believe that certain Intel Pro cards will work but I doubt very much that they will be supported by Cisco !

No - I've tried this with numerous cards - even cards from other Cisco equipment that looked exactly the same (a LocalDirector in my case).

Only specific Intel based cards will work. If you have an Intel card, you can verify if it will work based on the model number listed on one of the chips.
For more information, take a look at this field notice from Cisco. Near the bottem of the page are pictures from example Intel cards that WILL work in PIX firewalls (This includes 2/4 port NIC's):
