I am looking for guidance on how to setup Call Manager with two gatekeepers. Does anyone have some good docs?

It's fairly straight forward (unless I'm missing something here).
Set 2 gatekeepers on CM.
Set up 2 trunks on CM.
You can put these 2 in a Route Group for redundancy.
Or in separate Route Groups within a single Route List (depending on requirements).
The router configs would be as such....
Router1 would have a local Zone (Zone1)
Router1 would have a remote zone (Zone2)
Router2 would have a local Zone (Zone2)
Router2 would be a remote zone (Zone1)
The CallManagers would be registering to both routers since you'd have already configured 2 Gatekeepers and 2 trunks.
That's basically it.
Your preferred order of call routing will depend on the Route Lists/Route Groups. CM handles the redundancy using RL/RG's.
Hope this helps.

Thanks, does this work with the IOS alternate gatekeeper feature?

I'm not aware of the "alternate gatekeeper feature" specifically.
The way I described it above works. It's part of the gatekeeper functionality. I personally don't consider it a feature, rather just doing things in a certain way. Perhaps someone out there coined that term or something...
let me know if it is a solution to your issues.
thanks,
