Is any way to disable the handset microphone when someone chooses to use the headset. Or to disable the hand set entirely?

Nope. According to me, there is no way to do that.

We are having problems with this not working as expected, cutting the handset out when the headset is used. Not all feedback is desired.

You could just remove the handset from the phone entirely, and turn the little plastic notch around. This will keep the phone "on hook" and allow you to use the headset only.

You are operating with the headset button illuminated, I assume?
