It's simple to change the IP (just like any other server/workstation), but there may be several other steps depending on whether or not you use DNS/Unity/IPCC etc... See this link for a guide:

Refer the doc provided by Aaron above. But theres one thing missing in the doc is that after changing IP of any node in the cluster you have to restart the Call Manager service on every node on the cluster otherwise there will be replication and partitioning problem.
