No, Unity doesn't automatically remove messages from your store based on a schedule, age or the like. We have to be extra careful since this is a unified messaging system and doing things like reaching in and yanking messages out of someone's inbox is generally frowned upon. Such features are more normal when you have a seperate, proprietary message store that's all yours all the time.
However, there are Exchange tools you can setup to automatically remove/archive/report on messages that match any profile you want, including read state, age, message type etc... The best of these is the Mailbox Agent (for 5.5) which you can get with the BackOffice resource kit. You can checkout this post on that:
