Yes - you can have such topology.
You need to configure VPC domain on n7k. Then on both n7k, links to cat 6k configure in PoX and under PoX configure VPC X
On cat6k side this will look as legacy port-channel.
Please be aware that n7k cannot run routing protocols with cat6k via this VPC
