When putting an ip on a serial interface, can I use the ip unnumbered loopback command so it uses the address of the loopback interface ?

Hi Carl,
Ofcource you can do that but remember that once you use unnumbered feature you will not be able to manage your serial interface remotely, even ping will not work so in future for troubleshooting purpose it will be difficult.
Rest there is no restriction for the same.Infact it is better to use unnumbered with looopbck address as it always remain up and up till the router itself goes down
