Am i able to create a seperate vPC domain to connect two 2248-E FEX switches so that a server can connect to two seperate FEXs in the same cabinet for redundancy?
You do not need two separate vPC domains. One option is to pin each FEX to a single upstream switch. This doc covers your design options and the pros/cons of each.
