Can I do a direct upgrade from 6.0.188 to 7.3.101.0? Is there a doc available that explains the process? I have 2 5508 controllers and planning on upgrading one controller at a time.

No, you can't do a direct upgrade, you'll need to do a staged upgrade to 7.0 or 7.2 first.

This is what I got directly from Cisco's release notes on 7.3.101:
•
It is not possible to directly upgrade to the 7.3.101.0 release from a release that is older than 7.0.98.0.
I'd go to a 7.0.x release from 6 and then go to 7.3.101.0
