Are T1's normally configured using encap PPP, is that right ?
If so, I have (3) C2610's that I want to practice PPP and they are connected via Serial cable (V35). Please advise best scenarios that I can explore that will help me troubleshoot T1's and other links that rely on PPP.

Well, actually, I believe PPP is usually only used for interoperability with other vendor's routers.
For point-to-point between Cisco routers, Cisco / HDLC is probably most common.
For Frame Relay, Frame Relay encaps is used.
I see FR and Cisco most of the time.
Troubleshooting Frame-Relay will be somewhat different than PPP or HDLC.
If you're studying for a Cisco test, you'd probably do better to study Frame Relay.
What are the current hardware configurations of your routers? What version of IOS do you have loaded?
More later ....
Good Luck

Thanks for the answer Scott.
My three routers are running IOS 12.3. I have one serial interface each router.
I am planning to practice Frame-Relay as well.
